Nutella Cookies, a recipe for a rainy day

Have you ever tried baking with a child? It’s a bit like baking with an octopus, lot’s of hands licking the spatula, the bowl and pouring extra ingredients whenever you take your eyes off them for a second.

However stressful it is, baking it’s one of my favourite “rainy day” activities to do with my kids.  OK, not so much these days as they have discovered game consoles, but they still love baking with me from time to time.

We are not expert bakers so we try to do simple recipes with ingredients we have in our baking cupboard. These Nutella cookies are one of those we make on a regular basis. With just 4 ingredients they are simple, quick and easy to make. And who doesn’t like Nutella? Even my super fussy eater likes these cookies.

For extra gooiness, you can add chocolate chunks to the mixture. Once cooked, they give that kind of melt in the mouth texture to the cookies that makes them taste even better.

Be careful though, once you start making these and realise how easy they are, you will be baking them every week.  And eating them every week!

Nutella Cookies Recipe

Ingredients

Makes: 20 cookies

140g plain flour

100g caster sugar

1 large egg

250g Nutella

Optional: Baking chocolate cut in chunks

Instructions

Preheat the oven to 175C  and line baking sheets with baking paper

  1. Beat the egg and sugar together
  2. Add the flour to the mixture
  3. Add the Nutella
  4. Form the mixture into small balls and flatten them slightly with the back of a fork. Place them into a lined sheet spacing them well apart
  5. Bake for about 7 or 8 minutes, take out of the oven and leave to cool on the baking sheet for 10 minutes. Then transfer to a wire rack to cool completely
